Best Banana Nut Bread Ever!


 I like banana bread.. especially slathered in butter while still warm from the oven, BUT this recipe was a game changer for me. I LOVE this recipe, it makes a moist banana bread with small chunks of banana in it and you don't even need butter. So I compromised and only buttered half my slice. I followed the recipe that I found Here pretty much exactly how it's written except I added 1 cup chopped pecans in stead of 1/2.. cuz Pecans are my favorite. I used 2 smaller loaf pans and it baked in about 30 to 40 minutes. Just check after 30 minutes with the toothpick test and keep an eye on it. You will love it!


Best Banana Nut Bread Ever! 2 cups all-purpose flour 1 1/2 tsp. baking soda 1/2 tsp. salt 4 overripe bananas (divided) 1 cup sugar 2 sticks unsalted butter, melted and cooled 2 large eggs 1 tsp. vanilla extract 1/2 cup pecans, chopped ( I use a whole cup) Preheat oven to 350ยบ and lightly grease a 9x5” loaf pan (or two smaller loaf pans) I line my pans with parchment paper and leave some ends sticking out on each side. Easier to lift out of the pan that way. In large bowl, sift the flour, baking soda, and salt and set it aside. Lightly mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture, you want some chunks left. In a separate larger bowl, with an electric mixer, whip the remaining 2 bananas and sugar together for 3 minutes, until you have a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated, don’t over blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan(s). Tap the pan on the counter to get any air bubbles out. Bake for 1 hour or up to 1 hour and 15 mins for a 9x5" pan. If using two smaller pans, bake approximately 35 to 45 minutes, or until golden brown and a toothpick inserted into the center of the loaf comes out clean. Cool the bread in the pan for 10 minutes, then turn out onto a wire rack to cool completely before serving.
